Foodie Friday: Guacamole!

I hope everyone had a very Merry Christmas! After all that sugar, it's time for something GREEN! Guacamole! I made this guacamole for a gathering with friends and it was a pretty big hit. The only thing I did differently from the original recipe is I omitted the onions. I might make it again with the onions, just to see the difference.


Ricardo's Famous Guacamole 

3 avocados 
Zest of 1 lime 
Juice of 2 lines 
1/4 of a bunch of cilantro, minced 
1/2 jalapeƱo pepper, minced
1/2 Serrano pepper, minced 
1 garlic clove, crushed and minced 
4 teaspoons olive oil
Salt and pepper, to taste 

First, combine all the ingredients except the avocados in a small bowl. In a larger bowl cube the avocados, pour in the other ingredients, and mash with a potato masher or fork, to your liking. 

Taste the guacamole and add olive oil if it's too tart and salt/pepper to your taste. Then transfer the guacamole to a serving bowl and press plastic wrap directly on the surface of the guacamole to prevent browning. 

Refrigerate the guacamole for at least one hour. Serve with tortilla chips and/or veggies. 

Serves 4-8.
