Foodie Sunday: Chocolate Banana Bread



Last week was a crazy one with it being my last week at work, etc. So, understandably, I wasn't on top of Foodie Friday. So, now we have Foodie Sunday. 

This chocolate banana bread is from one of my favorite blogs: The Real Life RD. I love the way Robyn is so real about overall health. I altered this recipe a bit (based on what I had on hand) from her recipe, but I've already tasted it and it's great! I plan on eating it this week for breakfast with peanut butter. 

Chocolate Banana Bread
The Real Life RD
  • 1 cup whole wheat flour
  • 1/2 cup coconut flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 bananas
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla
  • 2 teaspoons butter
  • 3 tablespoons cocoa powder
  • 6 tablespoons boiling water
  • 1/3 cup almond milk
Preheat your oven to 350 degrees and grease an 8x8 inch baking pan (I also lined mine with parchment paper). 

In one bowl, mix all the dry ingredients (except cocoa powder). In another bowl, mix all the wet ingredients (except the boiling water). Then gently combine the dry and wet ingredients together. 

Combine the cocoa powder with 3 tablespoons of the boiling water. Add half the bread batter to the cocoa powder mixture and combine well (but gently). Add the other 3 tablespoons of the boiling water to the other half of the bread dough. 

In the prepared pan alternate the plain and chocolate dough and swirl together. My dough was very thick. Bake for about 40 minutes or until cooked through. Let cool, cut, and eat! 

Serves about 9-12.
