Foodie Friday: Peppermint Rice Krispie Treats



These are SO EASY and delicious! I made them for my mom's work and they came out great! They's light, crispy, chocolate-y, sweet, refreshing and peppermint-y! You can make them with white or milk chocolate. Really, these were minimal effort for maximum results. And they made a ton!

If you like candy canes and Rice Krispie treats, I highly recommend making these for a party.

Peppermint Rice Krispie Treats
Cooking Classy

  • 1/4 cup butter (salted)
  • 1 package (about 10 ounces) miniature marshmallows
  • 1/2 teaspoon peppermint extract
  • 6 cups Rice Krispies cereal
  • 1.75-2 cups white chocolate chips (or milk chocolate)
  • 1/4 cup crushed candy canes
In a large pot, melt your butter over low heat. Add the marshmallows and stir until they are all melted and smooth. Take the pot off the heat and stir in the peppermint extract. Add the cereal and fold it all in gently, making sure it's evenly covered in melted, peppermint-y marshmallow goo. Spread the cereal mixture in a buttered 9 x 13" pan (I also lined my pan with parchment paper). Using a butter spatula, firmly press the cereal mixture into the pan until it's all even. 

In a microwave-safe bowl, melt the chocolate chips in 30 seconds intervals until they are smooth and pour-able. Pour the melted chocolate evenly over the top of the Rice Krispie Treats and then sprinkle them with the crushed candy canes. 

Pop the whole pan into the refrigerator for 30 minutes (or more). Then the treats will be ready to cut into squares. Delicious!

Makes 20 or more, depending on how you cut them. And they're pretty rich, so small squares are nice.
