Cookies & Music

One day this past week AJ and I made some amazing chocolate chip cookies. Compared to classic chocolate chip cookies, this recipe calls for half the amount of cookie dough and double the amount of chocolate chips! They are so good! Here is the recipe...

LOTS of Chocolate Chips Cookies
  • 1 1/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 stick butter, softened
  • 1/2 cup packed brown sugar
  • 6 tablespoons white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 24 ounces semi-sweet chocolate chips (or any kind of chocolate chips, if you want to experiment)
Directions: Preheat your oven to 350 degrees. In a small bowl sift together the flour, baking soda, and salt. In a larger bowl, mix the butter and brown and white sugars for about 1 minute with a hand held mixer. Add the egg and vanilla and beat for an additional 1 minute. Slowly add the flour and mix until just incorporated. Next, stir in the chocolate chips. Drop dough by tablespoons on a lightly greased cookie sheet and bake for 10-15 minutes, until golden brown. Then get ready for lots of chocolate!


Every year, at this time of year, Fort Worth has an annual event called "Concerts in the Garden". Every weekend during this time there is a concert, featuring the Fort Worth symphony and other special musicians, and it's held in the Fort Worth Botanic Gardens. I wanted to go so badly last year, but I never got an opportunity.

This past Friday night, AJ and I went and heard a Beatles cover band and Beatles songs played by the Fort Worth symphony! It was such a fun experience. It's a tad bit pricey, but tons of people come with blankets, chairs, and even little coffee tables. People pack gourmet picnic dinners and drink wine. AJ and I didn't know people brought food, so we ate beforehand, but I wish we had packed a picnic because it looked like so much fun. We just laid out on our blanket, talked, and listened to the music. There's something about being outside, right around dusk, when it's warm outside that I find so relaxing. It was a perfect Friday night outing. It was so fun that it even kind of makes me want to come back to Fort Worth this time next year, just so I can go again, and this time pack a fun picnic dinner.

Well, now the week's about to start. I'm not terribly excited about that, it's going to be a very busy week. When I start to feel overwhelmed by the week, I try to break it into little bits of time and just focus on each little bit at a time. Like now, I need to JUST focus on the rest of my relaxing Sunday...

Still waiting on those cookies...I guess this poor pregnant lady will have to bake some herself. :(
